How calamari gets to your table

Calamari is not one of my favorite foods. Once or twice I’ve had it fixed perfectly and it was a delight, but it’s usually like tasteless rubber. That said, I’m always curious about how things are done and the work people do.

So I was pleased to be able to photograph the men and women who bring calamari to the table.

The boat comes into port with its hold loaded with squid. Giant hoses suction the catch from the hold into the white pipes you see.

They are then pumped to a station, about 50 yards away, where the squid are iced and boxed for transport.
